Panquecas / Pancakes


Esta receita faz as melhores panquecas que eu já comi. A receita original Bruce Paltrow's World Famous Pancakes é do pai da actriz Gwyneth Paltrow e esta é uma versão retirada do site goop.com e adaptada para quantidades mais reduzidas: 1 dúzia de panquecas pequenas ou 4 panquecas grandes.

Uma pequena nota: a massa das panquecas prepara-se na noite de véspera. 

Ingredientes (1 dúzia de panquecas)
1 chávena de farinha
2 colheres de sopa açúcar amarelo
1/2 colher de sopa de fermento
1 colher de chá de sal fino
1 chávena de buttermilk (ou soro de leite)
1 colher de sopa de manteiga
2 ovos
1/3 chávena de leite de arroz

Preparação
1. Misturar os ingredientes secos numa taça grande.
3. Misturar o buttermilk, a manteiga e ovos noutra taça.
3. Adicionar a mistura anterior aos ingredientes secos até ficar uma mistura homogénea.
4. Deixar repousar no frigorífico durante a noite com a taça forrada com papel película.
5. Na manhã seguinte adicionar o leite de arroz e mexer até ficar uma mistura homogénea.
6. Aquecer um pouco de manteiga numa frigideira  anti-aderente.
7. Cozinhar as panquecas virando-as quando o lado não cozido começar a formar bolhinhas.
8. Deixar cozinhar por 3 minutos e retirar do lume.
9. Servir com maple syrup ou compota.

This recipe is the best recipe of pancakes that I already ate. The original recipe Bruce Paltrow's World Famous Pancakes is from the actress Gwyneth's Paltrow father and this is a version from the website goop.com changed for less portions: 1 dozen of small pancakes or 4 large pancakes.

One note: the batter is prepared on the night before.

Ingredients (1 dozen pancakes)
1 cup all-purpose flour
2 tablespoon brown sugar
1/2 tablespoon baking powder
1 teaspoon fine salt
1 cup buttermilk 
2 tablespoon butter
2 eggs
1/3 cup rice milk

Method
1. Whisk all dry ingredients together in a large bowl.
2. Whisk together buttermilk, butter and eggs in another bowl.
3. Add the wet ingredients to the dry ones whisking to combine.
4. Let the batter sit in the fridge, covered with kitchen film, overnight.
5. The next morning add the milk to the batter and whisk until combine.
6. Heat up a non-stick pan with some butter.
7. Cook the pancakes flipping them after bubbles appear on the surface of the uncooked side.
8. Let cook for more 3 mins and remove.
9. Eat with maple syrup or jam.

Granola caseira / Homemade granola



Para quem aprecia um pequeno almoço saudável e saboroso, granola com leite ou com iogurte é delicioso. Esta é uma das variadas versões de granola que pode fazer em casa. E o melhor de tudo é que é tão fácil. 

Ingredientes
2 chávenas de aveia em flocos grossos
½ chávena de pecan e nozes cortadas
¼ chávena de sementes (girassol / abóbora)
½ chávena fruta seca sem açúcar cortada
2-3 colheres de sopa de maple syrup ou mel
2 colheres de sopa de óleo de coco
½ colher de chá de extracto de baunilha / amêndoa
1 pitada de sal marinho

Preparação
1. Pré-aqueça o forno a 180˚C.
2. Misturar todos os ingredientes numa taça e com as mãos envolver bem até ficar tudo misturado.
3. Espalhar a mistura num tabuleiro previamente coberto com uma folha de papel vegetal e levar ao forno cerca de 10 minutos, até ficar dourada.
4. Deixar arrefecer antes de servir ou de guardar.
5. Guardar a granola num frasco bem fechado por 2 semanas.

Ingredients
2 cups raw whole rolled oats
½ cup raw pecan and nuts chopped
¼ cup raw seeds (sunflower / pumpkin)
½ cup unsweet dried fruit, chopped
2-3 tablespoon maple syrup or honey
2 tablespoon virgin coconut oil
½ teaspoon vanilla / almond extract
1 large pinch fine sea salt

Method
1. Preheat the oven 180˚C.
2. Combine all the ingredients in a mixing bowl and use your clean hands to mix well and toss to coat.
3. Spread the mixture into a thin layer on a baking sheet and bake for 10 minutes, until very lightly toasted.
4. Cool before serving or storing.
5. Kept the granola in airtight container in a cool and dry place for 2 weeks.
