Costeletas à moda da Diana / Diana style steaks



Desde pequena que  minha mãe conta que vi esta receita na televisão e lhe pedi para fazer para o almoço. Desde desse dia que assim se faz cá em casa as costeletas à moda da Diana.


Ingredientes:
4 costeletas de porco do cachaço
2 dentes de alho esmagados
2 colheres de sopa de farinha
1 colher de chá de cominhos
1 queijo ralado parmesão ou mozzarela
Pimenta
Sal
Azeite
200 ml de natas

Preparação:

Misture a farinha, os cominhos, o sal e a pimenta e passe as costeletas  por esta mistura. Numa frigideira grande e anti-aderente deite um fio de azeite e os dentes de alho e frite as costeletas dos dois lados, quando estiverem prontas retire e coloque num tabuleiro para irem ao forno. Deite as natas na frigideira e deixe cozinhar 2/3  minutos para ganhar sabor. Adicione as natas às costeletas e o queijo ralado e  leve ao forno 200º grill a gratinar. Sirva com arroz branco e salada.

Since I was a child that my mother always told me the history of this recipe: I saw this recipe on TV show and asked her to do it for the lunch. Until today we do this recipe that we had named of Diana style steaks.

Ingredients:
4 pork steaks from the topside 
2 cloves garlic crushed
2 tablespoons flour 
1 teaspoon of cumins
1 grated Parmesan cheese or mozzarella 
Pepper 
Salt 
Olive oil 
200 ml of fresh cream 

Method:
Mix the flour, the cumins, the salt and the pepper and pass the steaks for mix. In a large sauteuce pour a little  of olive oil and the garlic cloves and fry the steaks on both sides. When they are ready remove and place on a tray that can go to the oven. Add the cream into the sauteuce and cook for a few minutes to take steaks sauce taste.  Add the sauce and the grated cheese to the steaks and return to oven to reach a golden brown. Serve with white rice and salad.

Bife Argentino com molho chimichurri / Argentinian steak with chimichurri sauce



Aqui em Londres há um restaurante argentino muito famoso, o Gaucho, que é conhecido por servir  um bife argentino espectacular. Eu não sou fã de carne de vaca mas o Maridão é por isso inspirada no episódio Don't fry me Argentina do programa The Surreal Gourmet do canal Food Network tentei recriar o famoso bife argentino com o molho chimichurri. Este foi o resultado e foi muito apreciado.

Ingredientes (2 pessoas)

Molho
2 colheres de sopa de salsa picada
3 dentes de alho picados
1 colher de chá de sal
½ colher de chá de pimenta preta moida na altura
½ colher de chá de pimenta cayenne
1 colheres de sopa de oregãos
2 colheres de sopa de cebola picada
4 colheres de sopa de azeite
½ colher de sopa de vinagre branco
1 colher de sopa de limão

Bife
2 bifes do lombo com 2.5 cm de espessura aproximadamente
1 colher de sopa de pimenta cayenne
3 colheres de sopa de sal

Preparação
1. Pré aquecer o forno em modo grill.
2. Temperar os bifes com sal e pimenta cayenne.
3. Colocar os ingredientes todos do molho num robot de cozinha e triturá-los.
4. Reservar o molho.
5. Colocar os bifes directamente no tabuleiro próprio para grelhar dentro do forno e deixar ficar até a carne ganhar uma tonalidade castanha no geral e uma mancha levemente rosada no centro (esta é uma sugestão que deve ser ajustada ao gosto de cada um dependendo de como gosta mais do bife grelhado).
6. Colocar cada bife num prato e barrar com o molho chimichurri no topo. Servir com arroz branco.

There is a famous Argentinian restaurant here in London, Gaucho, which is known as one of the best places to serve Argentinian steak.  I’m not fan of red meat but my Husband is so I got some ideas from the Don’t fry me Argentina episode from The Surreal Gourmet show on Food Network TV channel and came up with the Argentinian steak with chimichurri sauce. This was the result and it was much appreciated.

Ingredients (serves 2)

Sauce
2 tablespoon of parsley chopped
3 garlic cloves minced
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon ground cayenne pepper
1 tablespoon of oregano
2 tablespoon of onion, minced
4 tablespoon of olive oil
½ tablespoon of wine vinegar
1 tablespoon of lemon juice

Steak
2 sirloin steaks with 1 inch thick
1 tablespoon cayenne pepper
3 tablespoon salt

Method
1. Preheat the oven in grill mode.
2. Season the steaks with salt and cayenne pepper.
3. Place all chimichurri sauce ingredients in a food processor and pulse until well chopped.
4. Reserve the sauce.
5. Place the steaks directly over the hot grill rack and grill until the outer portion of the meat reaches a thick band of light pink through the middle but be more browned than pink (of course this depends of how you like your steak cooked) .
6. Place each steak in a plate and baste with the chimichurri grilling sauce. Serve with plain rice.

Espetadas de carne picada e especiarias e couscous com couve / Spicy minced meat skewers and couscous with kale


Hoje as recordações dos cheiros e sabores de Marrocos inspiraram-me para fazer estas espetadas com especiarias.


Ingredientes:
6 folhas de couve coração cortadas em juliana
1 dente de alho
coentros (ou 2 cubos de coentros congelados*)
azeite
água a ferver
1/2 copo de couscous
1/2 copo de vinho branco
400 gr de carne de vaca picada
1 colher de café de gengibre
1 colher de café de cominhos
sal
pimenta 


Preparação:


Couscous: numa frigideira larga salteie a couve coração com azeite, alho e uma pitada de sal. Num prato fundo deite os couscous com uma pitada de sal e adicione a água a ferver até acima ligeiramente acima do nível do couscous. Tape com película aderente durante 5 minutos. Destape, mexa com um garfo e acrescente a couve salteada.

Espetadas: Tempere a carne com o sal, pimenta, gengibre e os cominhos e envolva nos paus de espetada. Leve a grelhar numa chapa anti-aderente (se necessário acrescente um fio de azeite) e quando estiverem praticamente prontas, com o lume alto adicione o vinho e deixe reduzir. Retire do lume e sirva com o couscous e uma salada de tomate.


*Nota: quando compro coentros, e para que estes não se estraguem, costumo congelar os coentros. Numa cuvete de gelo coloco os coentros migado e encho com azeite. Depois de congelado coloco num saco e quando preciso é só acrescentar ao cozinhado.

Today I felt inspired by the spicy scents and flavours' memories brought from the time I traveled in Morocco. 

Ingredients:
6 kale leaves chopped
1 garlic clove
fresh coriander (or 2 cubes of frozen coriander*)
olive oil
boiling water
1/2 cup couscous
1/2 cup white wine
400 gr of minced beef
1 teaspoon of ginger
1 teaspoon of cumin
salt
pepper


Method:
Couscous: In a sauce pan sauté kale, garlic and olive oil with a pinch of salt. In a deep dish place the couscous with a pinch of salt, add the boiling water slightly above the couscous and cover with cling film for 5 minutes. Uncover, stir with a fork and add the sautéed kale.


Skewer: season the meat with salt, pepper, ginger and cumin and wrap the skewer sticks. In a grill pan (if necessary add a little bit of olive oil) grill the skewers and when they are almost ready add the wine and let it reduce in a high heat. Remove from cooker and serve with the couscous and a tomato salad.
*Note: when I buy the coriander I usually freeze them so that they last more time. In an ice cube tray I place chopped coriander and fill with olive oil. Once frozen I place it in a bag and when I need to use it I just add one or two cubes to cooked.
