Bacalhau fresco à Bulhão Pato / Fresh cod with Bulhão Pato sauce


Este é o molho típico português que acompanha amêijoas mas para uma receita diferente experimentei cozinhá-lo com bacalhau fresco e revelou-se uma agradável surpresa. E tão delicioso!  

Ingredientes (2 doses)
4 postas pequenas de bacalhau fresco
3 dentes de alho
2 colheres de sopa de azeite
1 colher de sopa de salsa picada
1 colher de sopa de coentros picados
3 colheres de sopa de vinho branco
sal 
pimenta preta moida na hora

Preparação
1. Aqueça o azeite e o alho numa frigideira grande em lume médio alto.
2. Adicione a salsa, os coentros e as postas de peixe. Tempere com sal e pimenta preta.
3. Baixe um pouco o lume e vá virando as postas de vez em quando com uma espátula para o peixe não partir.
4. Quando o peixe estiver meio cozido adicione o vinho e deixe ficar até o peixe estar completamente cozido. 
5. Sirva acompanhado de uma fatia de pão rústico.

This typical portuguese sauce is usually served with clamps but as a different option I've cooked it with fresh cod and it end up a very pleasant surprise. So delicious!

Ingredients (2 portions)
4 small pieces of fresh cod
3 garlic cloves
2 tablespoon olive oil
1 tablespoon chopped parsley
1 tablespoon chopped coriander 
3 tablespoon white wine
salt
fresh black pepper

Method
1. Heat the olive oil and garlic in a big sauce pan over medium high heat.
2. Add parsley, coriander and cod fish. Season with salt and black pepper.
3. Low down the heat and turn the fish gently with a spatula.
4. When the fish is half cooked add the wine and leave it until fully cooked.
5. Serve with a slice of bread.

Pota Grelhada/ Grilled squid

Ao fim de semana, aproveitando a vida do campo, sempre que possível cozinhamos ao ar livre. O jantar foi feito em familia: tivemos pota grelhada (receita do meu pai), batatinhas às rodelas bem fininhas e salada de tomates biológicos! Fiquei fã de pota grelhada e vocês já experimentaram? Não podia ser mais simples de fazer e tão delicioso!

Ingredientes:
800gr de tiras de pota
Sal
Alho moido/ alho em pó

Preparação:
Tempere as tiras de pota e leve a grelhar em lume bem quente. Grelhe dos dois lados até ficar dourado e com consistência. Sirva com umas batatas fritas às rodelas e uma boa salada de tomate.

At the weekend, enjoying the country life, we prefer to cook outdoors on the barbecue. Dinner was done by all family. We had grilled squid (my father's recipe), potato crisps and organic tomatoes salad! I became a fan of grilled squid, did you already try? It couldn't be simpler to cook and so delicious! 

Ingredients:
800gr strips of squid 
Salt 
Crushed garlic / garlic powder 

Method: 
Season the strips of squid and light the grill in hot fire. Broil on both sides until golden and when it's ready serve with some potato crisps and a good tomato salad.

Salada de Bacalhau/ Cod Salad



Bacalhau! Minhami! Gosto de bacalhau de todas as maneiras e feitios, mas a verdade é que a tendência é fazer sempre a mesma meia dúzia de receitas, mas hoje trago-vos uma receita que foge aos tradicionais pratos de bacalhau. Espero que gostem!

Ingredientes: (4 pessoas)
1 abacate grande maduro cortado em cubos
2 tomates limpos em cubos
1 lata de grão (200gr)
2 postas grandes de bacalhau
Água
1 raminho de coentros
1 chávena de couscous
Sal
Azeite

Preparação:
Coza o bacalhau em água (se necessário tempere com sal). Quando cozido retire o bacalhau reserve e coe a água. Num prato fundo deite os couscou e adicione a água da cozedura do bacalhau(quente) até ligeiramente acima do nível do couscous e tape bem durante 5 minutos. Destape o couscous, mexa com um garfo e deixe arrefecer. Quando estiver frio junte o bacalhau desfiado, o grão, o abacate, tomate e o os coentros. Envolva todos os ingredientes e adicione um fio de azeite e rectifique o tempero se necessário.

Cod! Minhami! I love cod and I love all million cod recipes, but saying the truth I always cook the same half dozen recipes. But today I've tried something different. I hope that you enjoy! 

Ingredients: (4 persons) 
1 large ripe avocado, sliced
2 sliced tomatoes
1 can of beans (200gr) 
2 large slices of cod 
Water 
1 bunch of coriander 
1 cup of couscous 
Salt 
Olive oil 

Method:
Bake the cod in a saucepan (sprinkle with salt if necessary). When is cooked remove the cod aside and strain the water. In a deep dish place the couscous , add the boiling water (cokking cod water) slightly above the couscous and cover with cling film for 5 minutes. Uncover, stir with a fork  and let cool. When cold add the shredded cod, the beans, the avocado, the tomato and the coriander. Mix all ingredients and add a little olive oil and rectify the spice if necessary.

Santo António: Sardinhas assadas! / St Anthony Feast: Roasted sardines



Chegaram os Santos Populares e com eles o sol (finalmente), o cheiro a sardinhas assadas e os almoços ao ar livre. Hoje, dia de Santo António, temos à mesa sardinhas, salada de pimentos, salada de tomate , vinho verde e não podia faltar o manjerico com uma quadra tradicional.

Ingredientes: (4 pessoas)
20/24 sardinhas
2 pimentos vermelhos
2 pimentos verdes
2 cebolas em rodelas
2 tomates cortados
Sal
Vinagre
Azeite
Fatias de pão rústico

Preparação:
Tempere as sardinhas com bastante sal. Acenda o lume e quando estiver bem quente asse os pimentos. Prepare a salada de tomate, juntado a cebola e o tempero. Quando os pimentos estiverem bem assados retire a pele e as sementes, corte em tiras, junte a cebola e tempere a gosto. Coloque as sardinhas a assar e quando estiverem prontas sirva sobre uma fatia de pão rústico.

Dica: Para retirar a pele dos pimentos, passe os pimentos por água e um a um coloque num saco plástico e esfregue até sair a pele.

Today is the feast day of St Anthony, the patron saint of Lisbon, and this means that in Lisbon today we can only eat one thing: roasted sardines! People all over the city - friends, neighbours, family -, get together and go crazy about sardines. Everyone shares it and taste it, even if it's coming from your neighbours kitchen. Of course that today the recipe couldn't be anything else than sardines and we had it for our lunch: roasted sardines, multi-coloured pepper salad, tomato salad, green wine and as the tradition demands: the basil plant with the love poem on our balcony. 

Ingredients: (4 people) 
20/24 sardines
2 red peppers
2 green peppers
2 onions, sliced
2 tomatoes sliced
Salt
Vinegar
Olive oil
Sliced rustic bread

Method:
Sprinkle the sardines with a lof of salt. Light the fire and first roast the peppers. Prepare the tomato salad with one sliced onion and season to taste. When the peppers are ready remove the skin and the seeds, add the onion and season to taste. Put the sardines on the fire and when they are roasted serve above a slice of bread.

Tip: To remove the skin from the peppers, skip the peppers with water and place in a plastic bag and rub until leaving.

Salmão com fettuccine/ Salmon with fettuccine


Hoje deixo-vos uma receita bem simples e deliciosa para fazerem depois de um dia de trabalho. Espero que gostem!


Ingredientes:

2 postas de salmão grelhado e limpo de espinhas
200 gr de rúcula
4 colheres de sopa de sementes de girassol
2 colher de sopa de sementes de sésamo
200 gr  de fettuccine al dente
sal
vinagre balsâmico

Preparação:

Junte todos os ingredientes numa taça e tempere a gosto com o vinagre e sal.

Today I bring you a delicious and simple recipe to do after working day. I hope you enjoy!

Ingredients:
2 slices of grilled salmon and clean of pimples
200 gr rocket
4 tablespoons of sunflower seeds
2 tablespoon of sesame seeds
200g fettuccine al dente
salt
balsamic vinegar

Method:
Mix all the ingredients in a bowl and season to taste with the vinegar and salt.

Moqueca de camarão / Shrimp moqueca



Esta receita da moqueca é adaptada da receita original da Bahia porque dada a dificuldade de encontrar certos produtos aqui em Londres foi feita sem o azeite de dendê (óleo de palma) mas se tiver oportunidade de o encontrar substitua o azeite normal pelo de dendê. 

Ingredientes (2 doses)
Sumo de 1 limão
400 gr de camarão 60/80 descascados e sem tripa
6 dentes de alho amassados e picados
2 cebolas pequenas cortadas em rodelas
1/2 pimento vermelho cortado em tiras
1/2 pimento verde cortado em tiras
2 tomates pequenos despelados e cortados em cubos
2 colheres de sopa de polpa de tomate
200ml de leite de coco
coentros q.b
piri-piri em pó
sal
azeite

Preparação
1. Temperar os camarões com sumo de meio limão, 3 dentes de alho, sal, piri piri, coentros e um pouco de azeite e deixar a marinar por 30 mins.
2. Refogar as cebolas com 3 dentes de alho, as tiras de pimentos e um pouco de azeite.
3. Quando as cebolas estiverem moles juntar o tomate, polpa de tomate e o sumo de meio limão. Refogar mais um pouco (mais ou menos 10 a 15 mins). 
4. Juntar o leite de coco e coentros e deixar até levantar fervura. 
5. Numa frigideira juntar um pouco de azeite e os camarões com a marinada e deixar ficar até ganharem um pouco de cor. 
6. Retirar os camarões do lume e juntá-los à panela do molho de coco até ficarem prontos.
7. Servir com arroz branco.

This recipe is a version of the Bahia recipe one as I struggled a little to find the palm oil here in London so I used olive oil instead. If you have the chance to use the palm oil switch the olive oil for this one.  

Ingredients (serves 2)
1 squeezed lemon
400 gr medium size prawn shelled and deveined
6 garlic cloves smashed and minced 
2 small onions sliced 
1/2 red pepper sliced
1/2 green pepper sliced 
2 small tomatoes without peel and sliced
2 tablespoon of tomato pulp 
200ml coconut milk
coriander (as much as needed)
ground piri-piri
olive oil 
salt
azeite

Method
1. Season the shrimp with half of squeezed lemon, 3 garlic cloves, salt, piri-piri, coriander and olive oil and set aside for 30 mins.
2. In a large saucepan cook on medium high onions, the other 3 garlic cloves, red and green pepper and olive oil. 
3. When the onion is tender add tomatoes, tomate pulp and the other lemon half squeezed. Cook for a about 10 to 15 mins.
4. Add coconut milk and coriander and bring to boil.
5. On a large roasting pan cook olive oil, shrimp and its sauce until it turns pink. 
6. Remove from the heat and add it to the saucepan with the coconut sauce. Cook until the shrimps are ready.
7. Serve with plain rice. 

Salmão estufado com espargos / Stewed salmon with asparagus


Há um desafio a decorrer para a revista Women's Health que consiste em cozinhar pelo menos uma refeição caseira todos os dias durante o mês de Maio, ou seja, 31 refeições em 31 dias. Esta foi uma das receitas que fiz para o desafio, saudável e deliciosa.

Ingredientes

2 postas de salmão
1 cebola roxa
1 tomate 
azeite qb
sal qb
pimenta qb
salsa fresca
1 molho de espargos

Preparação

1. Picar a cebola e o tomate.
2. Refogar a cebola e o tomate picado numa frigideira com um fio de azeite em lume brando.
3. Colocar as postas de salmão e temperar com sal e pimenta. 
4. Deixar estufar cerca de 20 minutos virando as postas de salmão de vez em quando. 
5. Adicionar salsa fresca cortada.

Notas

1. Cozer os espargos em água e sal e servir com o salmão (pode temperar os espargos com o molho do salmão ou com um pouco de azeite).

Women's Health magazine set up a challenge that is cooking at least one homemade meal every day in May called 31 Meals in 31 Days. This was one of the recipes that I have cooked for the challenge, very healthy and tasty.

Ingredients
2 salmon pieces
1 purple onion
1 tomato
olive oil (as much as needed)
salt (as much as needed)
pepper (as much as needed)
fresh parsley
250gr asparagus

Method
1. Chop onion and tomato in food processor.
2. Stir onion and tomato with olive oil over medium heat. 
3. Add salmon and seasoned with salt and pepper. 
4. Leave it for 20 mins but turn the salmon from time to time.
5. Add chopped parsley.

Tips

1. Stand the asparagus in boiling water and salt (seasoned with the sauce from the salmon or olive oil).
