Hummus de abacate/ Avocado Hummus



Já algum tempo que andava com a ideia de fazer hummus, mas quando vi esta receita percebi que era perfeita para experimentar! Adorei! É óptima para servir como entrada ou como petisco num "lanche ajantarado".

Ingredientes:
2 abacates maduros
2 dentes de alho
1 frasco de grão (500gr)
1 molho pequeno de coentros (+/- 10pés)
1 fio de azeite
1 colher de sobremesa de paprika
1 limão

Preparação:
Junte os abacates, o grão o alho, os coentros e sumo do limão numa trituradora e misture até obter uma pasta consistente e homogénea. Coloque numa taça, regue com um fio de azeite e polvilhe com paprika.

I was planning to cook hummus since a while ago and when I saw this recipe it seemed the right opportunity to try this perfect recipe! I loved it! It's great to serve as a starter or as a snack on a late afternoon meal.

Ingredients:
2 ripe avocados 
2 cloves of garlic 
1 bottle of grain (500gr) 
1 small sprig of coriander  (+ / - 10ft) 
1 drizzle of olive oil 
1 tablespoon of paprika 
1 lemon

Method:
Add the avocados, the grain garlic, coriander and the juice from the lemon in a food processor and blend until became consistent and smooth. Place in a bowl, drizzle with a bit of olive oil and dust with paprika.

Folhado de queijo de cabra com cebola caramelizada / Goat cheese and caramelised onion pastry

E para receber uma amiga para jantar fiz este folhado com cebola caramelizada e queijo de cabra. Parece que fez sucesso :). A ideia veio do facebook da Mafalda Pinto Leite.

Ingredientes (2 pessoas):
2 cebolas grandes
1/2 queijo de cabra
1/2 folha de massa folhada
1 colheres de sopa de manteiga
1 colher de chá de açúcar amarelo
3 colheres de sopa de vinagre balsâmico
Tomilho

Para acompanhar: Vinho tinto: Pinga Amores (colheita seleccionada 2011)

Preparação:
Corte as cebolas em rodelas finas e leve a lume brando juntamente com a manteiga deixando cozinhar por 5 minutos. Junto o açúcar e o vinagre e deixe cozinhar por 10 minutos mexendo de vez em quando. Corte 4 partes iguais de massa. Para cada folhado coloque 1 fatia de massa, a cebola, o queijo, o tomilho e por fim a outra fatia de massa. Leve ao forno a 200º  por 15 minutos. Sirva com um bom vinho tinto a acompanhar.

I cook this starter for a dinner with a friend: goat cheese and caramelised onion pastry. It was a success :). This idea came from Mafalda Pinto Leite  facebook. 

Ingredients (serves 2): 
2 large onions sliced
1/2 goat cheese 
1/2 sheet of puff pastry 
1 tablespoon of butter 
1 teaspoon of brown sugar tea 
3 tablespoons balsamic vinegar 
Thyme 

Wine suggestion: Portuguese red wine Pinga Amores (selected harvest from 2011) 

Method:
Cook the chopped onions with the butter for 5 minutes in medium heat. Add the sugar and vinegar and cook for more 10 minutes. Cut the pastry on 4 equal pieces and for each puff pastry pick slice of pastry,  2 tablespoons of caramelised onions, 2 slices of goat cheese, thyme and finally another slice of pastry. Bake on the oven at 200 º for 15 minutes. Serve with a good red wine.

Focaccia


Adoro focaccia. É ideal para acompanhar uma sopa ou uma salada. Esta receita é adaptada do blog the kitchn com uma focaccia bem simples para ser feita como base; se quiser pode adicionar outros ingredientes como topping. Eu acompanhei com uma salada de tomate e queijo mozzarella.  

Ingredientes

21gr de fermento de padeiro
1 3/4 chávena água quente
3 1/2 chávena farinha
1/2 chávena farinha integral
2 colheres chá sal marinho
4 1/2 colheres sopa azeite virgem

Preparação

1. Dissolver o fermento na água quente. Aguardar até que o fermento crie uma espécie de espuma.
2. Misturar as farinhas e sal numa batedeira. Adicionar o fermento e 3 colheres de sopa de azeite. 
3. Bater bem até formar uma massa lisa.
4. Retirar a massa da batedeira, colocar num tabuleiro que vá ao forno e cobrir com um pano.
5. Levar a levedar num lugar quente durante 1 hora. 
6. Aquecer o forno.
7. Temperar a focaccia com o restante azeite e umas pedrinhas de sal marinho.
8. Levar ao forno a 200°C cerca de 30 mins (ou até ficar dourada).

I love focaccia. It's great to combine with a soup or a salad. This recipe is based on the blog the kitchn with a plain focaccia that can be serve as it is or you can top with other ingredients. I ate it with a tomato and mozzarella salad.

Ingredients

3 envelopes active dry yeast (or 21gr)
1 3/4 cups warm water
3 1/2 cups white flour
1/2 cups whole wheat flour
2 teaspoons sea salt
4 1/2 tablespoons good extra virgin olive oil

Method

1. Dissolve the yeast in warm water and wait until the mixture start to foam up.
2. Pulse flours and salt in a food processor. Add yeast mixture and 3 tablespoons of olive oil. 
3. Pulse until the dough forms.
4. Remove dough from food processor, place it in a roast pan and cover with a tea towel.
5. Leave in a warm place to rest about 1 hour.
6. Preheat the oven.
7. Season the focaccia with the rest of olive oil and a bit of sea salt.
8. Place in the oven at 200°C for about 30 mins (or if it's golden-brown).

Bruschettas de tomate e ovo escalfado/ Bruschettas with tomato and poached egg


Bruschettas cá em casa significa jantar de domingo: quando dá aquela preguiça para cozinhar... mas não é razão para não se comer algo saboroso.

Ingredientes (para 2)
2 fatias de pão alentejano (ou outro a gosto)
1 dente de alho
1 tomate grande
2 ovos escalfados
Azeite, pimenta, oregãos e sementes de sésamo qb.

Preparação
Toste o pão sem deixar ficar demasiado rijo. Descasque o alho e corte ao meio e esfregue o pão e regue com um fio de azeite. Sobre o pão coloque o tomate cortado em pedaços e o ovo escalfado. Regue com um fio de azeite e tempere a gosto.

Nota
Pode fazer uma versão mais pequena desta receita com ovos de codornizes e sirva como entrada.

At home Bruschettas sounds like Sunday dinner: when it feels like I'm not in the mood to cook... but that doesn't mean that we cannot eat something tasty. 

Ingredients (for 2)
2 slices of rustic bread (or another as desired) 
1 clove of garlic 
1 large tomato 
2 poached egg 
Oil, pepper, oregano and sesame seeds to seasoning

Method
Toste the bread without getting to stiff. Peel the garlic and cut in half and rub the bread and drizzle with some olive oil. Place over the bread the tomato sliced into pieces and the poached egg.  Drizzle with a olive oil and spices to taste.

Tip
You can make a smaller version of these Bruchettas with quail eggs and serve as a starter.
